We use free range ’Sutton Hoo’ chickens which are first poached then picked by hand.
We use the stock from cooking the chicken mixed with French chestnut puree, butter, wheat flour, sherry, salt and pepper. The result is a rich tasty sauce with large chunks of fresh chicken.
There are no chestnut pieces in this dish.
